You'll need a bamboo sushi roll mat, plastic wrap, rice paddle or wooden spoon, and a sharp sushi knife. For ingredients, gather sushi rice, nori sheets, and your choice of fillings like crab, cucumber, avocado, or smoked salmon.
Place the bamboo sushi mat on a cutting board with the bamboo strips running horizontally. Cover the mat with plastic wrap to prevent sticking.
Place one sheet of nori shiny-side down on top of the plastic-wrapped mat.
Spread about 1 cup of prepared sushi rice evenly over the nori, leaving a small margin at each end. Wet your fingers with water to prevent sticking while patting the rice down firmly.
Arrange your chosen fillings in a horizontal line across the center of the rice. Avoid overfilling to ensure the roll closes properly.
Lift the bottom edge of the mat with the plastic wrap and fold it over the ingredients. Apply gentle but firm pressure to shape the roll. Continue rolling until about an inch of nori remains exposed. Wet the edge with cold water to seal.
Use a sharp wet knife to slice the roll into 6-8 pieces. Wet the knife between each cut for clean edges. Serve immediately with wasabi, soy sauce, and pickled ginger.
