Restaurant-quality Portofino pasta with fresh pesto and cherry tomato sauce in 5 minutes
Learn how to make authentic Italian Portofino pasta with fresh homemade pesto, cherry tomato sauce, and perfectly cooked pasta. This quick recipe delivers restaurant-quality results in just 5 minutes.
Add 50g fresh basil, 30g pine nuts, 1 clove garlic, and 25g Parmigiano Reggiano to a food processor. Season with salt, pepper, and drizzle in olive oil while blending until smooth.
Halve 15 cherry tomatoes and add to a pan with 1 clove minced garlic. Sauté for a few minutes until tomatoes begin to soften.
Pour in 200ml tomato puree, add salt, pepper, and chili flakes to taste. Cover and simmer for about 10 minutes.
Boil 250g pasta in salted water until al dente. Drain and add directly to the tomato sauce.
Toss the pasta with the sauce, add generous scoops of fresh pesto, and mix well. Serve immediately with extra Parmigiano on top.
